Gooey Non-Dairy Chocolate Chip Cookies



Who loves their chocolate chip cookies extra gooey and rich? We do, at least! We've found and tried a delicious recipe for coconut oil chocolate chip cookies that are dairy-free and extremely chewy. We warn you though, they're addictive so don't blame us when you can't stop at just 2!


These cookies have no dairy, no artificial ingredients, and are guaranteed to make your mouth water. The taste of coconut is subtle, but aromatic and replaces butter! This recipe takes a total of 30 minutes-- 15 min prep and 15 min cook!


INGREDIENTS:

  • 1 1/2 cup all-purpose flour

  • 1 1/4 cups bread flour (but all purpose-flour also works)

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 2 teaspoons cornstarch

  • 1 teaspoon fine sea salt

  • 1 cup Little Jasmine© Coconut Oil

  • 1/2 cup granulated sugar

  • 1 1/4 cups brown sugar

  • 2 teaspoons vanilla

  • 2 large eggs, plus 1 yolk

  • 2 cups semi-sweet chocolate chips


DIRECTIONS:

  1. Preheat the oven to 350 degrees. Line baking sheets with nonstick or parchment paper.

  2. In a medium bowl, combine the flours, baking soda, baking powder, salt, and cornstarch.

  3. Beat the coconut oil, granulated sugar, and brown sugar until well combined. Add the eggs one yolk at a time, beating well and add the vanilla.

  4. Gradually beat in the flour mixture and stir in the chocolate chips.

  5. Divide the dough into desired shaped balls and drop them on the baking sheets.

  6. Bake for 10-12 minutes, and cool for 2 minutes before removing.

If you want to up your game on texture and taste, you can refrigerate the dough for at least 24 hours, wrapped in plastic wrap.


This recipe yields about 48 cookies, depending on their size so good luck trying to limit yourself! ;)
