Not-Your-Mama's-Granola

INGREDIENTS:

  • 4 cups old-fashioned rolled oats

  • 1 cup dried fruit

  • 1 cup roasted or raw nuts

  • 1/2 cup chia seeds

  • 1/3 cup Little Jasmine© Coconut Oil

  • 1/3 cup maple syrup

  • 1 teaspoon vanilla extract

  • 1 teaspoon salt

  • 1 teaspoon cinnamon

DIRECTIONS:

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

  2. In a large bowl, combine oats, fruit, nuts, seeds, cinnamon and salt. Hand mix until blended.

  3. In a smaller bowl, whisk together the Little Jasmine© Coconut Oil, maple syrup and vanilla. When completely combined, pour over the dry ingredients and stir until everything is lightly coated.

  4. Pour mixture over your prepared pan, making sure that it is evenly dispersed.

  5. Bake for 20-30 minutes, or until golden brown, making sure to stir and rotate half way through.

  6. Store granola in a airtight jar or bag for up to 1 month.

**If you like clumpy granola, press down gently on granola with spoon or spatula before putting into oven + again half way through baking.
