Vegan Harvest Chili


INGREDIENTS:

•1 Diced onion

•3 Chopped celery stalks

•3 Chopped carrots

•1/2 C. sliced mushrooms

•1 Can tomato sauce

•1 Can kidney beans

•1 Can white beans

•1 tsp. Salt

•1 tsp. Cumin

•1 tsp. Paprika

•1/2 Tsp. Black pepper

•3 Tbs. Little Jasmine™ Coconut Oil

•2-4 C. Vegetable broth

DIRECTIONS:

1. Heat Little Jasmine™ Coconut oil over medium heat and put it onion once it gets hot.

2. Add mushrooms to the pan, once the onion is fragrant/semi translucent. Add a bit of veggie broth so nothing sticks to the bottom of pan, until the mushrooms have some color.

3. Stir in carrots, and tomato sauce. Cover pan and let sit for 7 minutes, stirring in occasionally.

4. Add in beans and spices and celery + more broth if needed.

5. Feel free to add more ingredients or spices at this time. Allow your chili to simmer until you are satisfied with the constancy.

OPTIONAL:

•Fresh or canned corn

•Fresh or canned green beans

•1 Can black beans

•TVP

•Vegan "ground beef" or vegan "sausage"

•Vegan "cheese" of your choice

•ANY OF YOUR FAVORITE VEGGIES OR SPICES
